If you find yourself with an abundance of zucchini, here’s a tasty way to use them up!
Zucchini Bites
- 1 Cup Zucchini (Grated and Squeezed Dry)
- 1 Egg
- 1/4 Cup Onion (Finely Diced)
- 1/4 Cup Cheddar or Parmesan Cheese
- 1/4 Cup Italian-Style Bread Crumbs
- Salt + Pepper
- Prepare muffin pan with spray.
- Mix all ingredients.
- Fill each section to the top.
- Bake at 400 degrees for 15-18 minutes.
